Texture, umami, and salinity: four new seaweeds

The sea remains one of the greatest sources of depth, texture, and complexity in contemporary cuisine. It is precisely from this universe that four new seaweeds arrive in our selection: Sea Spaghetti, Kombu, Irish Moss, and Wakame.

Four distinct varieties, each with its own unique profile, capable of bringing new aromatic, structural, and visual possibilities to the plate. More than just marine ingredients, they are tools for building flavour.

Sea Spaghetti stands out for its long, thin, and elegant shape, resembling natural vegetal strands. Once soaked, it gains a firm and slightly fleshy texture, offering a balanced and fresh iodised profile. It works exceptionally well in pasta, risottos, fish, seafood, and vegetable creations, adding movement, volume, and umami without excess.

Kombu, on the other hand, is one of the most highly valued seaweeds for the aromatic depth it offers. Rich in umami and featuring intense mineral notes, it has become a classic choice for broths, infusions, and stocks. Its capacity to naturally enhance flavour makes it extremely interesting for both traditional and contemporary cuisine, especially in vegetable preparations and fermentations.

More delicate and subtle, Irish Moss visually resembles a small coral structure, displaying reddish and violet hues. Once soaked, it reveals a soft and slightly gelatinous texture, highly prized for the richness and body it adds to broths, emulsions, desserts, and more delicate compositions. It is a seaweed of detail, precision, and elegance.

Meanwhile, Wakame is probably one of the most widely recognised seaweeds due to its versatility. With broad, silky leaves after rehydration, it presents a fresh, slightly sweet, and well-balanced iodised flavour. It works beautifully in soups, salads, risottos, fish, seafood, or vegetable dishes, enriching the course in both texture and visual impact.

All of our seaweeds are preserved in salt, and therefore require soaking before use.

With these four new additions, we continue to explore ingredients capable of bringing new layers of flavour, texture, and identity to the kitchen. Products that allow us to work with the sea beyond the obvious, with greater depth, precision, and creative freedom.
