How we choose what goes into the catalogue

Some people think new products appear because someone found them at a trade fair or saw a photo on the internet. In reality, it's rarely like that.

Just like chefs travel to discover new restaurants, new techniques, and new ingredients, we travel too. We visit growers, talk with farmers, explore markets, and try to understand what's happening in the most exciting kitchens all over the world.

We're constantly on the lookout for products that aren't yet in our catalogue, but could bring something new to your kitchen. It's not enough for them to be pretty. It's not enough for them to be different. They have to make sense.

Launching a new product is never just about adding another item to the catalogue. It's about asking: does this ingredient really help a chef create better? Does it bring a new flavour? A different texture? Does it solve a problem? Does it inspire new ideas?

When we find a product that excites us, the work is only just beginning. There are varieties that spend months—and sometimes years—in trials before making it into the catalogue. We try out different seeds, adjust growing methods, watch how the plant behaves across the seasons, and evaluate whether we can produce that ingredient with the quality and consistency we demand.

We don't always succeed!

Some products never reach the catalogue. Others force us to start over several times. And then there are those that seem to appear overnight, when in reality, they've been part of our work for a long time.

Crosnes are a good example. It took plenty of trials, tweaks, and learning until we felt they were ready to reach your kitchen. And Crosnes are just one example.

There are other products we're developing that should arrive later this year. Some are still in the testing phase. Others are getting closer and closer to joining the catalogue. They all have one thing in common: they'll only be launched when we're certain they live up to what we stand for.

The truth is, our catalogue is never finished! It's always evolving.

We believe that innovating isn't about releasing new things just for the sake of it. It's about having the curiosity to discover what's out there, the patience to test without rushing, and the high standards to say no whenever a product doesn't meet our expectations.

That's why, when a new product arrives in the catalogue, it has usually come a long way, even if it remained invisible until then.
