The Iceplant, also known as the ice plant or glacial ficoid, is a robust and succulent plant with a crystalline appearance and a shape reminiscent of coral, standing out among all the varieties we produce throughout the year.
Native to South Africa, but having spread throughout the Mediterranean, this coastal plant, which appears to have droplets of frozen water, has a salty, fresh, slightly sweet, somewhat bitter and umami flavour, and a crunchy texture.
It pairs very well with fresh and smoked fish dishes, such as cod, monkfish, and salmon, seafood and crustaceans (lobster, crab, shrimp, and oyster), and can also be used in tartares, with entrecôte and wagyu.
It also adds a distinctive touch to gin or vodka-based cocktails.
