Not out of a sense of achievement, but because of everything that lies behind what reaches the plate.

Our work doesn’t begin at delivery, nor even at harvest. It begins much earlier, in the choice of varieties, in the attempts that fail, in the constant adjustments, in the details that no one sees. Working with microgreens and edible flowers means working in short cycles, but with a very high daily demand.

There are days when everything grows as expected. And there are others when we have to start over, adjusting light, water, time, rhythm. There are decisions made in minutes and others that result from weeks of trial and error. It isn’t always visible, but it is always there.

This commitment to detail, consistency, and quality is what we believe connects us to the clients we work with. Because they work that way too. They also refine, test, repeat, and strive to do better. They recognise in the product not just the final result, but the entire process behind it.

At the same time, we know we can’t always show everything. The day-to-day of production is intense, and what truly sustains what we do often goes untold. Even so, there is a mutual trust. A kind of silent understanding.

It is this that makes us feel that, perhaps, we deserve the clients we have. And, in equal measure, that we are very lucky to have them.
