With its fleshy, branched texture resembling small green corals, sea asparagus (erva patinha) is a sculptural and elegant-looking seaweed. On the palate, it stands out for its firm and spongy consistency, with an intense, almost iodine-like salty flavor that evokes the sea in its purest form. Ideal for signature dishes, it works well raw in tartares, as an oyster topping, or lightly blanched in broths or compound butters. It’s a seaweed with both visual and gustatory presence. Our seaweeds are preserved in seawater to ensure freshness and stability. Before use, they should be rehydrated in cold water, with or without rinsing, depending on the desired salt level in the dish.
