The elderflower is a delicate and fragrant edible white flower, steeped in folklore and revered for its medicinal properties, incredible uses in cooking, and cosmetics. Native to Europe, elderflowers bloom from early spring to early summer, adorning the landscape with their clusters of small star-shaped flowers that grow in umbels. With notes of citrus, honey, and lychee, the elderflower has a unique fragrance. Its uses are varied and range from liqueurs, soft drinks, gins, vodkas, and beers to sweets, jellies, and vinegars. Try frying an elderflower umbel in batter, sprinkling it with powdered sugar and cinnamon, and serving it with a scoop of ice cream for a surprising dessert.
