Chinese Mahogany: a tree that fits on your plate

At first glance, it looks like a delicate microgreen. Small leaves, thin stems, and an intense green colour. But there's a detail that makes it particularly surprising: Chinese Mahogany is actually the young shoot of a tree.

Also known as Toona sinensis, it is a species native to Asia whose young foliage has been traditionally used in cooking long before reaching Western haute cuisine.

It's precisely in this initial stage of its growth that Chinese Mahogany reveals all its character.

The leaves are delicate, with the first being rounded and darker green, and the second slightly elongated and indented. Visually, it has an elegant, botanical presence, capable of bringing volume, movement, and different shades of green to the plate.

But it's in the flavour that it truly surprises!

Chinese Mahogany has an intense and very distinctive aromatic profile. It's vegetal, fresh, and slightly spiced, with notes reminiscent of onion, roasted garlic, and fresh herbs, accompanied by an almost umami depth. A lingering yet elegant flavour that adds personality without needing large quantities.

In the kitchen, it works primarily as a finishing element.

The young leaves can be used whole to create visual and aromatic contrast, or incorporated into dishes where their intensity can take on a more prominent role. It pairs particularly well with fish, seafood, white meats, mushrooms, eggs, and preparations with a strong vegetal component.

It also finds its place in salads, sauces, emulsions, and garnishes, where it can add an unexpected aromatic dimension.

On more delicate dishes, just a small amount is enough to transform the experience. Over grilled fish, it brings freshness and intensity. With mushrooms or roasted vegetables, it reinforces the earthy, vegetal side. On an egg dish, it creates a surprising aromatic contrast.

And then there's what can't be explained by flavour alone: the story it carries with it.

A microgreen that isn't just a shoot, but the beginning of a tree. An entire plant condensed into a small leaf, ready to be discovered and reinterpreted on your plate.

It's this combination of origin, appearance, and character that makes Chinese Mahogany such a unique ingredient.
